Y is for Yummy
I usually bring the appetizers for my book club, so I'm always looking for new ideas beyond the usual cheese and crackers or chips and dip. Here are a few favorites:
- Mini Spanakopitas
These spinach and feta-filled triangles are a pain to make, since they require phyllo dough. On the plus side, they freeze really well, so make extra and then just pop them out whenever you need some last-minute appetizers.
- Homemade Cheez-Its
I was surprised at how much everyone liked these cheese crackers. I do not own a pastry cutter, needed to make the fancy edgings, so I used a pizza cutter instead. Use the best quality extra sharp cheddar cheese you can find. - Spinach Artichokes Puff Pastry
This was easy to make and like the mini spanakopitas, it freezes well. It was a little bland, flavor-wise. Next time, I'll check out some of the suggestions in the comments such as fresh garlic or roasted red peppers to make a more flavorful version.
